Sweet Potato Casserole

Well it is Monday again 🙁 At least we got to gain an hour this weekend with time change. Hope you had a great weekend. This year is going by so quick. Can’t believe it is already November. That means Thanksgiving and Christmas are nearly here. Not sure about you but this tends to be the time I do my most cooking and baking. Sweet Potato Casserole is pretty much a must to have at your holiday dinner here in Texas, and it has become my go to dish to bring for the holidays.

Found this recipe in a cookbook from my Aunt, and it is always a hit.

Sweet Potato Casserole

Ingredients

  • 3 cups – Mashed sweet potatoes
  • 1-2 tablespoons – Sugar (to taste)
  • 2 – Eggs
  • 1 tsp – Vanilla
  • 1/2 cup – Milk
  • 1/2 cup – Butter, melted
  • Topping Ingredients
  • 1/2 cup – Brown sugar
  • 1/4 cup – Flour
  • 1 1/2 tablespoons – Butter, softened
  • 1/2 cup – Nuts

Instructions

  1. Mix sweet potatoes, sugar, eggs, vanilla, milk, and melted butter together and pout into greased casserole dish.
  2. Mix all topping ingredients together until crumbly.
  3. Top with the topping.
  4. Bake @ 350 degrees for 30 minutes

My mom found this recipe for Peanut Butter Fruit Dip on Pinterest recently, and it turned out to be pretty good.  After I tried it I just had to make some for myself, and it is quickly becoming one of my favorite recipes.

Peanut Butter Fruit Dip

Ingredients

  • 1 tbsp Honey
  • 1/3 cup Creamy Peanut Butter
  • 2 (5.3) oz container Vanilla Greek Yogurt

Instructions

  1. Simply whisk all 3 ingredients together and serve with fruit

This recipe is so easy it makes me wonder why I hadn’t thought of it before lol.  Peanut Butter Fruit Dip is such a great accent for your fruit.  My personal favorite has been apples.  Made some Peanut Butter Fruit Dip over the weekend, and took it with some apples to work as part of my lunch.  Instead of the traditional ranch dressing that usually comes with a fruit tray you could add Peanut Butter Fruit Dip to serve if you are having a party.  This would be perfect for a party or picnic cause even kids would like this dip.  You could even send this dip in school lunch for your kids.  Best part is the dip is healthy.   The three ingredients are probably ones you will already have at your house.  The dip is creamy, and sweet at the same time.

This is a great quick, and easy go to recipe for anyone.

Found this recipe for Lunch Lady Brownies on Facebook.  The recipe came from Donna Larson, and is a 50 yr old Recipe.  I made Lunch Lady Brownies and took them to work for my coworkers to try.

Lunch Lady Brownies

Ingredients

  • 1 c butter
  • 1/2 c cocoa
  • 2 c flour
  • 2 c sugar
  • 4 eggs
  • 4 tsp vanilla
  • 1 c chopped nuts (optional)
  • Icing Ingredients
  • 1/4 c softened butter
  • 1/4 c can milk (regular milk is fine)
  • 1/4 c cocoa
  • 3 c powdered sugar
  • Dash salt

Instructions

  1. Pour in 9×13 pan
  2. Bake 20-25 minutes on 350.
  3. Check at 20 minutes
  4. Mix all icing ingredients together; frost as desired.

Lunch Lady Brownies mainly have a fudge taste.  You can whip these up quick, and easy.  You could take these to a party, and they would be a hit.

Oatmeal Boiled Cookies

Oatmeal Boiled Cookies are a family recipe like Lemon Icebox Pie that I shared last week.  I have always liked Oatmeal Boiled Cookies more than chocolate chip cookies, which is saying a lot cause I love chocolate chip cookies.  Mom rarely made Oatmeal Boiled Cookies, so I always thought it was a big treat when she did.

For some reason I have always thought Oatmeal Boiled Cookies were hard to make, and was not sure I would be able to get them to come out right on my own.  Finally decided I would attempt to make my first batch by myself.

Oatmeal Boiled Cookies Recipe

Oatmeal Boiled Cookies

Ingredients

  • 2 cups Sugar
  • 4 tbsp Cocoa
  • 1 stick butter
  • 1/2 cup Milk
  • 2 1/2 cup Oats
  • 1/4 cup Nuts (optional or you can use Chunky Peanut Butter)
  • 2 tsp Vanilla
  • 1/2 cup Peanut Butter

Instructions

  1. Combine sugar, milk, butter & cocoa 1 1/2 minute after mixture comes to rolling boil
  2. Remove from heat immediately and add nuts, peanut butter, oats & vanilla
  3. Drop by teaspoonful on waxed paper

You will want to put newspaper underneath the wax paper to keep from making a mess.  Now Oatmeal Boiled Cookies can be temperamental.  If it is too humid sometimes they might not setup right.

Considering this was my first attempt at making Oatmeal Boiled Cookies think it was a success.  My first batch actually came out, and tasted good.  Not exactly like moms, but getting close.  I was just so excited my first batch actually turned out, and I didn’t mess them up.  Will definitely be making Oatmeal Boiled Cookies again in the future.

Now that I have made my first batch of Oatmeal Boiled Cookies not sure why I didn’t try to make them sooner.  Making Oatmeal Boiled Cookies was actually easier than I was thinking it would be.  Now not as easy as making a batch of Chocolate Chip Cookies or Lazy Cake Cookies, but not overly complicated.  If I can make them then anyone can.

Only bad part about making a batch of cookies is usually I can’t eat just one.  Really tests your will power lol.

Lemon Icebox Pie – A Family Recipe

When I had my own apartment my grandma would stop by for a visit, and bring me a Lemon Icebox pie cause she knew it was my favorite desert.  This is one of those family recipes I had always loved, and wanted to learn to make myself. Figured what better excuse to try to make a Lemon Icebox Pie than a work spread, so I made one to take for our monthly spread. This way I take it to work, and get my coworkers to eat it instead of myself. Good way to cut back on calories right?

Lemon Icebox Pie

Ingredients

  • 1 Graham Cracker Crust
  • 14oz can of Eagle Brand Condensed Milk
  • 1/2 cup Real Lemon Juice
  • 3 egg yolks
  • Cool Whip

Instructions

  1. Mix eagle brand milk, lemon juice, and eggs together
  2. Pour into graham cracker crust
  3. Freeze until ready to serve
  4. Add Cool Whip Topping right before serving

Viola that is it! This was my first attempt at making it, and was very surprised how easy it was to make. Now my grandma hand makes the graham cracker crust, but I went the cheat route with a store bought graham cracker crust. Her crust is definitely better, but the store bought worked out pretty well. Still tasted good, and made it pretty quick to make.

Storing your Lemon Icebox Pie

Store your Lemon Icebox Pie in the freezer after you make it (Hence why it is called Icebox Pie). Just sit it out about 30 minutes before you want to serve it to thaw a little, so you can cut it. You don’t want it to sit out too long or it is just becomes watery mess.
