Chicken Cacciatore Recipe

Well unfortunately we are back to a Monday 🙁  Swear the weekends are way to short.  Was going through recipes this weekend, and realized I had forgot to repost this recipe when I lost all my old post.  Thought it was worth reposting, so here you go.

Chicken Cacciatore Recipe by Lewis Lane

For a while Jeremy has subscribed to Men’s Health Magazine.  He found this chicken cacciatore recipe in the magazine and wanted to give it a try.  Figured why not it looked good, and was low in calorie. When we ate it we put it on a bed of rice as you can see in the photo.

Chicken Cacciatore Recipe

Ingredients

  • 4 - 8 oz chicken breast, diced into cubes
  • 1 - cup onion, diced
  • 1 - cup green pepper, diced
  • 3 - cups mushrooms, sliced
  • 1 - 28 oz can diced tomatoes
  • 1 - 14 oz can tomato sauce
  • 1 - 4.5 oz can tomato paste
  • 1 1/2 tsp basil
  • 1 1/2 tsp oregano
  • 2 - cloves garlic, minced

Instructions

  1. Coat a deep skillet with spray and place over medium heat
  2. Once the pan is hot, add chicken and cook 15-20 minutes stirring occasionally until cooked through
  3. Add in remaining ingredients and simmer for 1 hour

This recipe does make a lot of food. You can take as leftovers or cut in half if serving a smaller group. Since it was just Jeremy and I at the house we had leftovers for days.

Chili Stuff Over Fritos

What food comes to mind when you think of cold weather? Being from Texas for me it is Chili. Nothing sounds better on a cold day, or when it is snowing out than Chili. Growing up I loved eating Chili Stuff Over Fritos that my mom, and my grandma made. My Mom & Grandma got the recipe from Aunt Pat, and always called it Pat’s Stuff. My mom is a great cook, and this was one of her recipes I had to learn to make. Just mix a bunch of ingredients together, and Viola! Chili Stuff Over Fritos

Ingredients

  • 1 lb Hamburger Meat
  • 1/4 pkg Williams chili mix, or more if you would like spicier
  • 1 can Rotel
  • ¼ cup Water
  • 1 can Ranch Style Beans with Sweet Onions
  • ½ lb Velveeta Cheese
  • 1 cup Milk
  • 1 bag Fritos

Instructions

  1. Brown hamburger meat.
  2. Combine all ingredients in a pot on stove, and heat until cheese is melted.
  3. Once cheese is melted it is ready to serve.
  4. Serve over Fritos.

Now in my pictures you can see this time I made Chili Stuff Over Fritos on the stove.

Chili Stuff Over Fritos by Lewis LaneSometimes instead of using the stove I use a crock-pot. Just brown the meat the night before then in the morning I dump all the ingredients in the crock-pot before I leave for work, and when I come home the house smells good & dinner is ready.

One of the best kitchen utensils I have bought are my OXO Angled Measuring Cups. These cups are great because you don’t have to look on the side of the cup to see the measurements they show you the measurements on the inside.  Bought mine at Bed Bath & Beyond and they were only $19.95 for a 3 piece set that included 4 cup, 2 cup, and 1 cup. Chicken Parmesan

Chicken Parmesan by Lewis Lane DesignsThis Chicken Parmesan recipe came from Jeremy’s friend and fellow Fireman that is a chef. Jeremy and the guys on his shift eat pretty well since they have a chef on shift lol. This is a very quick and easy recipe. Since this Chicken Parmesan has no breading which cuts out a lot of calories.

Chicken Parmesan Recipe

Chicken Parmesan

Ingredients

  • 2 Chicken Breast
  • 1 bag Mozzarella Cheese (Kraft Fat Free Mozzarella)
  • 1 jar Marinara (Classico Tomato & Basil)
  • 9x13 dish
  • Mrs Dash Seasoning (Optional)

Instructions

  1. Preheat over to 400 degrees
  2. Line 9x13 dish with foil
  3. Place chicken breast in dish & season with Mrs. Dash
  4. Wrap foil over chicken breast
  5. Bake for 40 minutes
  6. Remove chicken from oven, add marinara, and recover
  7. Bake for 10 minutes
  8. Remove chicken from oven, add mozzarella, and recover
  9. Bake for 10 minutes

Sides you can add

Usually for our side since we have marinara left over we do spaghetti with marinara. Just boil some spaghetti noodles then put marinara over them. Then we put some Texas Toast Light garlic bread with it.
Pretty easy meal to make.
